Ready in 70 minutes- Makes 4 servings
Ingredients:
- 1/3 cup chia seeds
- 2 tbsp honey
- 3/4 cup coconut milk
- 1 tsp vanilla extract
- 2 tbsp chopped almonds
- 2 tbsp coconut flakes
- 1 cup strawberries,washed and diced
- 1 mango, pitted and diced
Instructions:
- In a medium- sized mixing bowl, combine coconut milk, honey, chia seeds, and vanilla extract. Cover with plastic wrap and refridgerate for 1 hour.
- In 4 seperate serving bowls, equally divid pudding mixture and top each serving with equal amounts of mango, strawberries, almonds, and coconut flakes. ENJOY!!
